Written recipe for Veg cooker pulav Prep time: 10 mins Cooking time: 25 mins Serves: 6 Ingredients: • Basmati rice 1 cup • Oil 1 tbsp • Jeera 1 tsp • Green cardamom 2 nos. • Black cardamom 1 nos. • Cinnamon stick 1 inch • Black peppercorn 3-4 nos. • Cloves 3-4 nos. • Bay leaf 1-2 nos. • Onion 2 medium size (sliced) • Ginger garlic paste 1 tbsp • Green chillies 1-2 nos. • Turmeric powder 1/4th tsp • Red chilli powder 1 tbsp • Coriander powder 1 tbsp • Tomatoes 2 medium size (chopped) • Salt to taste • Carrot ½ cup • Potatoes 2 medium size • Green peas 1/4th cup • Soya chunks 1 cup (cooked) • Water 1 ½ cup • Fresh coriander 1 tbsp (chopped) • Lemon wedges 2 nos. Method: • Rinse the raw rice thoroughly with fresh water and clean until the water is clear when rice is soaked. • Heat oil in a cooker, add the whole dried spices and sauté once, add onions and cook until translucent. • Add ginger garlic paste and green chillies, sauté for a minute, add the powdered spices and sauté for a minute. • Add tomatoes and salt, cook until they are mushy, add carrots, potatoes, green peas and soya chunks, cook for 2-3 minutes. • Add water and bring it to a boil, add the soaked rice, fresh coriander, lemon wedges and garam masala, give it a nice stir. Pressure cook for 1 whistle on medium flame. Switch off the flame and let the cooker depressurize naturally to open the lid. • Mix once again very gently, serve hot with chilled vegetable raita or any raita of your choice. Chicken Yakhni Pulao Serves 5-6 Recipe in English: Ingredients: -Falak Extreme Basmati Rice 750g (4 Cups) -Water as required -Chicken 750g -Lehsan (Garlic) sliced 8-10 cloves -Adrak (Ginger) sliced 1 inch piece -Pyaz (Onion) 1 medium -Saunf (Fennel seeds) 1 tbs -Zeera (Cumin seeds) ½ tbs -Sabut dhania (Coriander seeds) 1 tbs -Hari elaichi (Green cardamom) 3-4 -Javitri (Mace) 2 pieces -Jaifil (Nutmeg) 1 small piece -Darchini (Cinnamon sticks) 2-3 -Laung (Cloves) 5-6 -Bari elaichi (Black cardamom) 2 -Namak (Salt) ½ tbs or to taste -Sabut kali mirch (Black peppercorns) ½ tsp -Tatri (Citric acid) ¼ tsp -Water 1 & ½ litre -Cooking oil ½ Cup -Pyaz (Onion) sliced 1 large -Darchini (Cinnamon sticks) 2 -Hari elaichi (Green cardamom) 2-3 -Bari elaichi (Black cardamom) 1 -Sabut kali mirch (Black peppercorns) ½ tsp -Zeera (Cumin seeds) ½ tbs -Laung (Cloves) 3-4 -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Dahi (Yogurt) whisked ½ Cup -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Kali mirch powder (Black pepper powder) ½ tsp -Hara dhania (Fresh coriander) chopped 2 tbs -Hari mirch (Green chillies) 2-3 -Reserved stock 6 Cups -Namak (Salt) ½ tsp or to taste -Pyaz (onion) fried Directions: -In a bowl,add rice,water,wash thoroughly and soak for 20 minutes then strain soaked rice & set aside. -In a wok,add chicken,garlic,ginger,onion,fennel seeds,cumin seeds,coriander seeds,green cardamom, mace,nutmeg,cinnamon sticks,cloves,black cardamom,salt,black peppercorns,citric acid and water,mix well and bring it to boil,cover and cook on low flame until chicken is tender (approx. 15-20 minutes). -Take out chicken pieces & set aside,strain chicken stock (yakhni) and reserve for later use. -In a pot,add cooking oil,onion and fry until light golden. -Add cinnamon sticks,green cardamom,black cardamom,black peppercorns,cumin seeds,cloves and mix well. -Add ginger garlic paste and mix well. -Now add reserved chicken pieces,mix well and cook for 2-3 minutes. -Add yogurt and mix well. -Add red chilli powder,black pepper powder,fresh coriander,green chillies,mix well and cook until oil separates (approx. 4-5 minutes). -Add reserved stock,salt,mix well and bring it to boil. -Add soaked rice,mix and cook on medium high flame until water is reduced (4-5 minutes),cover & steam cook on low flame for 18-20 minutes. -Garnish with fried onion & serve! Recipe in Urdu: Directions: -Bowl mein chawal aur pani dal ker thoroughly wash ker lein aur 20 minutes kliya bhego dein phir soaked chawal ko strain ker lein & side per rakh dein. -Karhai mein chicken,lehsan,adrak,pyaz,saunf,zeera,sabut dhania,hari elaichi,javitri,jaifil,darchini,laung, badi elaichi,namak,sabut kali mirch,tatri aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancci per chicken gul janay tak paka lein (approx. 15-20 minutes). -Chicken pieces ko nikal lein & side per rakh dein aur yakhni ko strain ker ka bad mein use kernay kliya side per rakh dein. -Pot mein cooking oil aur pyaz dal dein aur light golden hunay tak fry ker lein. -Darchini,hari elaichi,badi elaichi,sabut kali mirch,zeera aur laung dal ker ache tarhan mix ker lein. -Adrak lehsan paste dal ker ache tarhan mix karein. -Ab reserved chicken piece dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein. -Dahi dal ker ache tarhan mix ker lein. -Lal mirch powder,kali mirch powder,hara dhania aur hari mirchein dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (approx. 4-5 minutes). -Reserved yakhni aur namak dal ker ache tarhan mix karein aur ubal anay dein. -Soaked chawal dal ker mix karein aur darmiyani tez ancch per pani reduce ho janay tak paka lein (4-5 minutes) aur dhak ker 18-20 minutes kliya halki ancch per steam cook ker lein. -Fried pyaz sa garnish ker ka serve karein!

Saute for a minute. ● Add ginger and garlic paste and saute for further 2-3 minutes until it release the aroma. ● Now add all the vegetables, salt and give a nice stir. Add ¼ cup of water, cover and allow it to cook until vegetables turn soft. ● Meanwhile take another pan heat ghee. Add cashew nuts, almonds, walnuts, raisins, dates and saute for 2 minutes on low flame. Now add paneer cubes and saute for another minute. ● Now add rice to the vegetable mixture. Give a nice stir. Adjust Salt. ● Now add sauteed dried nuts and paneer mixture. Heat oil in a kadai, add a few onion slices at one time and deep fry until crisp and golden in color. Transfer them to an absorbent paper. Cool them completely and store in an airtight container for further use. 𝗙𝗼𝗿 𝗠𝗮𝗿𝗶𝗻𝗮𝘁𝗶𝗼𝗻 In a large bowl, add carrot, french beans, cauliflower, paneer, and fried onion. Add fried onion oil, curd, fresh mint leaves, fresh green peas, salt to taste. Add green chilli, degi red chilli powder, turmeric powder, coriander powder, fresh coriander sprig and mix it well. Add ginger garlic paste, fried onion oil and marinate everything well. Keep aside for further use. 𝗙𝗼𝗿 𝗧𝗲𝗺𝗽𝗲𝗿𝗶𝗻𝗴 In a large cooker, add ghee once it's hot, add bay leaf, cinnamon stick, cloves, green cardamom, black cardamom let it splutter. Add marinated vegetables and saute it well. Cover it with a lid and cook on medium flame for 2-4 minutes. Add a few mint leaves, soaked basmati rice, hot water, fried onion, and green chilli. Sprinkle some garam masala, salt to taste, kewra water, few saffron strands, ghee. Cover it with a lid and cook over medium flame for 1 whistle. Let it cool at room temperature until pressure inside the cooker goes down naturally. Open the lid and fluff the rice with a fork. Transfer it to a serving plate or bowl. Garnish it with coriander sprig and serve hot with raita. 𝗙𝗼𝗿 𝗥𝗮𝗶𝘁𝗮 In a bowl, add cubed potatoes, onion, tomato, green chilli, curd and mix it well. Add coriander leaves, mint leaves, salt to taste, sugar, roasted cumin powder, degi red chilli powder and mix everything well. Simple and filling, Tomatoes add a dash of tanginess to this flavourful, rice and veg preparation. SABZI AUR TAMATAR KA PULAO Ingredients 2 medium carrots, peeled and cut into ½ inch cubes ½ cup shelled green peas ¾ cup cauliflower, cut into florets 10-12 French beans, ½ inch pieces 2 medium tomatoes, chopped 1½ cups Basmati rice, washed, soaked for 20 minutes, and drained 3 tablespoons ghee 1 teaspoon cumin seeds 3-4 green cardamoms 2 black cardamoms 1 inch cinnamon stick 4-6 cloves 2 medium onions, sliced Salt to taste Fresh coriander sprig for garnish Raita to serve Method 1. Heat ghee in a thick-bottomed pan. Add cumin seeds, green cardamoms, black cardamoms, cinnamon, cloves and bay leaf. Cook till fragrant, Add onions and fry till onions become translucent. 2. Add tomatoes and salt, mix, and cook till fat separates. Add carrot, cauliflower, French beans, and mix well. Cook for 1-2 minutes. 3. Add ½ cup water and let it boil. Continue to cook for 5-6 minutes. 4. Add rice, green peas, 2½ cups water, and mix well. Adjust salt, mix and cook till the mixture comes to a boil. Cover and cook on medium heat for 12-15 minutes or till the rice is cooked completely. 5. Open the lid and gently mix the rice. Transfer the rice on serving plate, garnish with coriander sprig and serve with raita.
